Enjoy classic lasagna comfort without the carbs. This recipe swaps traditional pasta for thin zucchini slices, making a delicious, lighter version of your favorite dish.

Ingredients

Scale
  • 3 large zucchinis
  • 1 pound ground beef or Italian sausage
  • 1 (15 ounce) container ricotta cheese
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • 1 (24 ounce) jar low-sugar marinara sauce
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Slice the zucchinis lengthwise very thinly, about 1/8 inch thick. Lay the slices on paper towels and sprinkle lightly with salt. Let them sit for 15 minutes to draw out moisture, then pat them completely dry.
  3. In a skillet over medium heat, cook the ground meat until browned. Drain any excess fat.
  4. In a medium bowl, mix the ricotta cheese, egg, Parmesan cheese, oregano, basil, and garlic powder. Stir well to combine.
  5. Spread a thin layer of marinara sauce on the bottom of the prepared baking dish.
  6. Arrange a layer of dried zucchini slices over the sauce, overlapping slightly.
  7. Spread half of the ricotta mixture evenly over the zucchini layer.
  8. Top the ricotta with half of the cooked meat.
  9. Spoon about one-third of the remaining marinara sauce over the meat layer.
  10. Sprinkle with one-third of the mozzarella cheese.
  11. Repeat the layers: zucchini, remaining ricotta, remaining meat, another layer of sauce, and one-third of the mozzarella.
  12. Finish with a final layer of zucchini slices, the rest of the marinara sauce, and the remaining mozzarella cheese.
  13. Bake for 30 to 35 minutes, or until the cheese is melted and bubbly and the sauce is hot.
  14. Let the lasagna rest for 10 minutes before slicing and serving.

Notes

  • Drying the zucchini well removes excess water, preventing a watery lasagna.
  • Use a low-sugar marinara sauce to keep the carbohydrate count down.
  • You can substitute ground turkey for beef if you prefer.
