Ingredients
Scale
2 cups ripe mango puree (from about 2 large mangoes)
1 cup plain yogurt
1/2 cup milk
1/4 cup sugar or honey (adjust to taste)
1/2 teaspoon ground cardamom
Pinch of salt
Optional: 1/4 teaspoon rose water
Instructions
In a blender, combine the mango puree, yogurt, milk, sugar or honey, cardamom, and salt.
Blend until smooth and creamy. If using, add the rose water and blend briefly.
Taste and adjust sweetness if needed.
Pour the mixture into popsicle molds.
Insert popsicle sticks.
Freeze for at least 4-6 hours, or until solid.
To unmold, run the molds under warm water for a few seconds.
Notes
For a richer flavor, use full-fat yogurt.
If your mangoes are not very sweet, you may need to add a little more sugar or honey.
You can substitute half-and-half for milk for an even creamier popsicle.
Garnish with chopped pistachios or a sprinkle of cardamom before serving.
