Ingredients
Scale
1 pork tenderloin (about 1 to 1.5 pounds)
2 tablespoons Dijon mustard
2 tablespoons pure maple syrup
1 tablespoon olive oil
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 400°F (200°C).
Pat the pork tenderloin dry with paper towels.
In a small bowl, whisk together the Dijon mustard, maple syrup, olive oil, thyme, salt, and pepper.
Place the pork tenderloin in a roasting pan or on a baking sheet.
Brush the maple Dijon mixture evenly over the entire surface of the pork.
Roast for 20 to 30 minutes, or until an instant-read thermometer inserted into the thickest part registers 145°F (63°C).
Remove the pork from the oven and let it rest for 5 to 10 minutes before slicing.
Slice against the grain and serve immediately.
Notes
The resting time is important; it allows the juices to redistribute, keeping your pork moist.
You can add a pinch of garlic powder to the rub for extra depth.
For a beautiful glaze, brush any remaining sauce over the pork halfway through cooking.
