Ingredients
Scale
1 1/2 cups rolled oats
1/2 cup chopped pecans
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups milk (dairy or non-dairy)
1/4 cup maple syrup
1 large egg, lightly beaten
2 tablespoons melted butter or coconut oil
1 teaspoon vanilla extract
Instructions
Preheat your oven to 375°F (190°C). Grease a standard 12-cup muffin tin well.
In a large bowl, combine the rolled oats, chopped pecans, baking powder, cinnamon, and salt. Mix these dry ingredients together.
In a separate medium bowl, whisk together the milk, maple syrup, egg, melted butter (or oil), and vanilla extract.
Pour the wet mixture into the dry ingredients. Stir until everything is just combined. Do not overmix.
Divide the oatmeal mixture evenly among the 12 prepared muffin cups.
Bake for 20 to 25 minutes, or until the tops are lightly golden and set.
Let the cups cool in the pan for a few minutes before carefully removing them.
Serve warm or store them for later.
Notes
For a sweeter treat, drizzle extra maple syrup over the tops before serving.
You can substitute walnuts for pecans if you prefer.
These freeze very well; cool completely before placing them in a freezer-safe bag.
