Ingredients

Scale
  • 1 cup dry quinoa
  • 2 cups milk (dairy or non-dairy)
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons pure maple syrup (or to taste)
  • 1/4 cup chopped pecans
  • 1/2 teaspoon vanilla extract
  • Pinch of cinnamon

Instructions

  1. Rinse the quinoa well under cold water.
  2. Combine the rinsed quinoa, milk, water, and salt in a saucepan.
  3. Bring the mixture to a boil over medium-high heat.
  4. Reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes, or until all the liquid is absorbed and the quinoa is tender.
  5. Remove the saucepan from the heat. Let it sit, covered, for 5 minutes.
  6. Fluff the cooked quinoa gently with a fork.
  7. Stir in the maple syrup and vanilla extract.
  8. Toast the chopped pecans lightly in a dry skillet over medium heat for 2-3 minutes until fragrant. Be careful not to burn them.
  9. Serve the warm porridge topped with the toasted pecans and a sprinkle of cinnamon.

Notes

  • For extra richness, use whole milk.
  • You can prepare a larger batch of quinoa ahead of time and reheat it with milk in the morning.
  • Add a spoonful of Greek yogurt for extra protein.
  • Fresh berries make a wonderful addition when serving.
