Ingredients
Scale
1/4 cup soy sauce
2 tablespoons sesame oil
1 tablespoon fresh ginger, grated
1 clove garlic, minced
1 teaspoon brown sugar
1/4 cup fresh lime juice
2 tablespoons olive oil
1 tablespoon Dijon mustard
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon black pepper
1/4 cup rice vinegar
2 tablespoons honey
1 tablespoon soy sauce (or tamari for gluten-free)
1 teaspoon sriracha (optional)
1 tablespoon fresh cilantro, chopped
Instructions
For the Asian Marinade: Whisk together soy sauce, sesame oil, grated ginger, minced garlic, and brown sugar in a bowl.
For the Citrus Herb Marinade: Whisk together lime juice, olive oil, Dijon mustard, oregano, thyme, and pepper in a separate bowl.
For the Sweet and Spicy Marinade: Whisk together rice vinegar, honey, soy sauce, and sriracha (if using) until combined.
Place tuna steaks in a shallow dish or zip-top bag. Pour one marinade over the tuna, ensuring all sides are coated.
Marinate tuna for 15 to 30 minutes maximum. Do not exceed 30 minutes, as the acid in some marinades can begin to ‘cook’ the fish.
Remove tuna from the marinade and pat dry before cooking immediately. Discard leftover marinade.
Notes
For Ahi or Yellowfin tuna, a 15 to 20 minute marinade time is usually sufficient for flavor penetration.
If you plan to cook the tuna immediately after seasoning without marinating, you can use the marinade ingredients as a basting sauce during the last minute of searing.
For a no-soy option, substitute the soy sauce in the Asian and Sweet/Spicy marinades with coconut aminos.
