Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
  3. Add the chicken cubes to the marinade and toss to coat. Let it marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  4. Thread the marinated chicken and vegetable pieces onto the skewers, alternating between chicken, bell peppers, and onion.
  5. Preheat your grill to medium-high heat.
  6. Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
  7. Serve hot and enjoy!

Notes

  • Serve with your favorite tzatziki sauce or a side of Greek salad.
  • Feel free to add other vegetables like zucchini or cherry tomatoes to your skewers.
  • For extra flavor, you can add a pinch of paprika or cumin to the marinade.
