Ingredients

Scale
  • 4 ears of corn, husked
  • 1/2 cup mayonnaise
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Pinch of cayenne pepper (optional)
  • Salt to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Grill the corn for 10-12 minutes, turning occasionally, until kernels are tender and lightly charred.
  3. While the corn is grilling, mix together the mayonnaise, cotija cheese, cilantro, lime juice, chili powder, garlic powder, and cayenne pepper (if using) in a small bowl.
  4. Once the corn is grilled, carefully spread the mayonnaise mixture evenly over each ear of corn.
  5. Sprinkle with additional cotija cheese and cilantro, if desired.
  6. Serve immediately and enjoy!

Notes

  • For a spicier kick, add more cayenne pepper or a dash of hot sauce to the mayonnaise mixture.
  • If you don’t have a grill, you can roast the corn in the oven at 400°F (200°C) for 20-25 minutes, turning halfway through.
  • Cotija cheese can be substituted with feta cheese if unavailable.
