Ingredients
Scale
2 large eggs
1 tablespoon milk or water
Pinch of salt
Pinch of black pepper
1 tablespoon shredded cheese (cheddar or mozzarella)
1 tablespoon chopped vegetables (like bell pepper or onion)
Instructions
Spray the inside of a microwave-safe mug lightly with cooking spray or wipe with a little oil.
Crack the two eggs into the mug.
Add the milk or water, salt, and pepper. Whisk well with a fork until the yolks and whites are fully combined.
Stir in your chosen cheese and chopped vegetables.
Microwave on high for 45 seconds.
Check the omelette. If it is still very wet, microwave in 15-second intervals until the eggs are set but still slightly moist. Total cook time is usually between 1 minute and 1 minute 30 seconds.
Carefully remove the mug from the microwave. Let it cool for one minute before eating directly from the mug or sliding it onto a plate.
Notes
Use a mug that holds at least 10-12 ounces to prevent overflow.
Vegetable additions should be finely chopped so they cook through quickly.
You can add a pinch of dried herbs like chives or parsley for extra flavor.
For a richer omelette, substitute milk with cream.
