Bake rich, dark mocha brownies with an unexpected, warm spice kick. Discover the secret ingredient that elevates this classic treat.

Ingredients

Scale
  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup strong brewed coffee or espresso, cooled
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 teaspoon cayenne pepper (the secret kick)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper, leaving an overhang.
  2. In a large bowl, whisk together the melted butter and sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, salt, and cayenne pepper.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Stir in the cooled coffee and the chocolate chips. The batter will be thick.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 25 to 30 minutes. A toothpick inserted near the edge should come out mostly clean, but the center should still look slightly fudgy.
  9. Let the brownies cool completely in the pan before using the parchment overhang to lift them out.
  10. Cut into squares and enjoy your bold mocha creation.

Notes

  • The cayenne pepper adds warmth, not intense heat. Adjust to your preference.
  • Using strong coffee deepens the mocha flavor significantly.
  • For extra fudginess, slightly underbake them by 2-3 minutes.
  • Cooling completely makes cutting clean squares much easier.
