Enjoy a rich and indulgent Mint Pots de Creme, perfectly balanced with a light, fresh finish from the whipped cream. This dessert honors deep, comforting tradition with a bright, seasonal touch.

Ingredients

  • Heavy cream: 2 cups
  • Egg yolks: 6 large
  • Granulated sugar: 1/2 cup
  • Fresh mint leaves: 1/2 cup, packed
  • Vanilla extract: 1 teaspoon
  • Pinch of salt
  • For Whipped Cream: Heavy cream, Powdered sugar, Mint extract (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Gently heat 1 cup of the heavy cream with the fresh mint leaves in a saucepan until steaming, but not boiling. Remove from heat, cover, and let the mint steep for 30 minutes.
  3. Strain the mint-infused cream into a clean bowl, pressing gently on the leaves to extract flavor. Discard the leaves.
  4. In a separate bowl, whisk the egg yolks and sugar until pale and slightly thickened.
  5. Slowly whisk the warm mint cream into the egg mixture. Stir in the remaining 1 cup of cold heavy cream, vanilla extract, and salt.
  6. Pour the custard mixture through a fine-mesh sieve into a clean bowl to catch any solids.
  7. Divide the custard evenly among six small ramekins.
  8. Place the ramekins in a baking pan and carefully pour hot water into the pan until it reaches halfway up the sides of the ramekins (this is a water bath).
  9. Bake for 30 to 35 minutes, or until the edges are set but the centers still jiggle slightly.
  10. Carefully remove the ramekins from the water bath and let them cool completely on a wire rack.
  11. Chill the pots de creme in the refrigerator for at least 4 hours, or until fully set.
  12. Before serving, top each with freshly whipped cream and a small mint leaf for garnish.

Notes

  • For an extra deep mint flavor, you can steep the mint for up to one hour.
  • If you prefer a lighter, fresher take, use less cream in the base and add a touch more fresh mint essence.
  • The water bath is key; it helps the custard cook gently, giving you that smooth, velvety texture Spoon loves.
  • Don’t skip chilling time; the texture improves significantly after several hours in the fridge.
