Ingredients

Scale
  • 3 lb beef chuck roast
  • 1 (1 oz) packet dry ranch seasoning mix
  • 1 (1 oz) packet dry au jus gravy mix
  • 1 (10 oz) jar pepperoncini peppers, with liquid
  • 1 stick (8 tbsp) unsalted butter, melted
  • 12 Hawaiian sweet rolls
  • 1/2 cup sliced dill pickles

Instructions

  1. Place the beef roast in the bottom of a slow cooker.
  2. Sprinkle the ranch seasoning mix and the au jus gravy mix evenly over the roast.
  3. Pour the entire jar of pepperoncini peppers and their liquid over the roast.
  4. Cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the beef is easily shredded.
  5. Remove the roast from the slow cooker and shred it using two forks. Discard any large pieces of fat.
  6. Return the shredded beef to the slow cooker and stir to coat it with the cooking liquid. Keep warm on the ‘Keep Warm’ setting.
  7. Preheat your oven to 350 degrees Fahrenheit.
  8. Slice the Hawaiian rolls in half horizontally, keeping the rolls connected.
  9. Place the bottom half of the rolls in a 9×13 inch baking dish.
  10. Spoon the shredded beef mixture evenly over the bottom rolls.
  11. Top the beef with the sliced dill pickles.
  12. Place the top half of the rolls over the pickles.
  13. Brush the melted butter evenly over the top of the rolls.
  14. Bake for 15 to 20 minutes, or until the tops are golden brown and the filling is hot.
  15. Slice the rolls into individual sliders and serve immediately.

Notes

  • You can prepare the shredded beef up to 2 days ahead. Store the beef and its liquid separately in the refrigerator. Reheat the beef in the slow cooker before assembling the sliders.
  • For easy serving, you can assemble the sliders completely, cover the dish tightly with foil, and keep them warm in a 200 degree Fahrenheit oven for up to 1 hour before guests arrive.
