Ingredients
Scale
4 cups mixed berries (blueberries, raspberries, blackberries, fresh or frozen)
1/2 cup granulated sugar
2 tablespoons cornstarch
1 tablespoon lemon juice
1/4 teaspoon ground cinnamon
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (1 stick) cold unsalted butter, cut into small pieces
1/2 cup milk
1 tablespoon coarse sugar, for sprinkling
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or similar baking dish.
In a large bowl, gently toss the mixed berries with the granulated sugar, cornstarch, lemon juice, and cinnamon until the berries are evenly coated. Pour this berry mixture into your prepared baking dish.
In a separate medium bowl, whisk together the flour, baking powder, and salt for the topping.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Pour in the milk and stir just until a shaggy dough forms. Do not overmix the biscuit topping.
Drop spoonfuls of the biscuit dough evenly over the berry filling. You do not need to cover the entire surface; gaps allow steam to escape and create a rustic look.
Sprinkle the coarse sugar over the biscuit topping.
Bake for 35 to 45 minutes, or until the topping is golden brown and the berry filling is bubbly around the edges.
Let the mixed berry cobbler cool on a wire rack for at least 15 minutes before serving warm with vanilla ice cream.
Notes
If you use frozen berries, do not thaw them first; use them straight from the freezer.
For an extra buttery cobbler crust, brush the tops of the biscuits lightly with melted butter before sprinkling with coarse sugar.
This recipe works well as a summer fruit dessert or a comforting treat any time of year.
