Create a rich and indulgent Mixed Berry Mascarpone Trifle with Pistachios. This dessert balances deep, comforting flavors with fresh, bright berries for a memorable bite.

Ingredients

Scale
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pound pound cake or ladyfingers, sliced
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1/4 cup berry liqueur or orange juice (optional)
  • 1/2 cup shelled pistachios, roughly chopped

Instructions

  1. Whip the heavy cream until stiff peaks form. Set aside.
  2. In a separate bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. Gently fold the whipped cream into the mascarpone mixture until just combined. This is your mascarpone cream.
  4. If using, lightly brush the pound cake or ladyfingers with berry liqueur or orange juice.
  5. Arrange half of the cake/ladyfingers in the bottom of a large glass trifle dish or individual serving glasses.
  6. Spread half of the mascarpone cream over the cake layer.
  7. Top with half of the mixed berries. Sprinkle with half of the chopped pistachios.
  8. Repeat the layers: remaining cake/ladyfingers, remaining mascarpone cream, remaining berries, and remaining pistachios.
  9. Chill the trifle for at least 2 hours before serving to allow the flavors to meld.

Notes

  • Jun, the Spoon, suggests using homemade pound cake for the deepest flavor.
  • Mei, the Sprout, recommends using berries at their peak ripeness for the freshest taste.
  • You can substitute Greek yogurt for some of the mascarpone for a slightly lighter texture.
  • For a nut-free version, omit the pistachios.
