A quick and easy single-serve mocha brownie, perfect for a late-night chocolate craving. This microwave mug brownie delivers a rich chocolate and coffee flavor in just two minutes.

Ingredients

Scale
  • 4 tablespoons all-purpose flour
  • 4 tablespoons granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon instant coffee granules
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • 3 tablespoons milk
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon chocolate chips (optional)

Instructions

  1. In a microwave-safe mug, whisk together the flour, sugar, cocoa powder, instant coffee granules, baking powder, and salt.
  2. Add the milk, vegetable oil, and vanilla extract to the mug. Stir until just combined and no dry streaks remain. Do not overmix.
  3. If using, stir in the chocolate chips.
  4. Microwave on high for 60-90 seconds, or until the brownie is set but still slightly moist in the center. Cooking time may vary depending on your microwave.
  5. Let it cool for a minute before enjoying.

Notes

  • For a richer mocha flavor, add an extra teaspoon of instant coffee granules.
  • You can add a dollop of whipped cream or a scoop of ice cream on top for an extra treat.
  • Be careful not to overcook, as this can make the brownie dry.
