This Molasses Gingerbread Loaf is a rich and dark treat, perfect for when you crave something deeply comforting and indulgent. Mei shares this recipe, balancing deep, traditional molasses flavor with a bright, sweet icing.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1/2 cup unsulfured molasses
  • 1/2 cup boiling water
  • 1 cup powdered sugar (for icing)
  • 2 tablespoons milk or water (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves. This is your dry mix.
  3. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  4. Beat in the egg until just combined.
  5. Stir in the molasses.
  6. In a separate small bowl, mix the boiling water with the dry ingredients until just blended. The batter will be thin.
  7. Pour the thin batter into your prepared loaf pan.
  8. Bake for 45 to 55 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the loaf cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
  10. To make the simple icing, whisk together the powdered sugar and milk/water until smooth.
  11. Drizzle the icing over the cooled loaf before slicing and serving.

Notes

  • The dark color of this loaf comes from the rich molasses, a key part of our family’s comforting flavors.
  • For an extra bright touch, Sprout suggests adding a tiny pinch of fresh lemon zest to the icing.
  • This loaf tastes even better the next day when the spices have fully settled.
