Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (or more, to taste)
  • 2 large eggs
  • 1/4 cup milk
  • Vegetable oil, for frying
  • For the Hot Sauce:
  • 1/2 cup unsalted butter, melted
  • 1/4 cup cayenne pepper
  • 1 tablespoon brown sugar
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a shallow dish, whisk together the flour, cornstarch, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper.
  2. In another shallow dish, whisk together the eggs and milk.
  3. Dip each shrimp first into the egg mixture, letting any excess drip off, then dredge it in the flour mixture, ensuring it’s fully coated. Place the coated shrimp on a plate.
  4. Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven to 350°F (175°C).
  5. Fry the shrimp in batches, being careful not to overcrowd the pot, for 2-3 minutes per side, until golden brown and cooked through. Remove the shrimp with a slotted spoon and place them on a wire rack to drain.
  6. While the shrimp are frying, prepare the hot sauce. In a small bowl, whisk together the melted butter, cayenne pepper, brown sugar, paprika, garlic powder, salt, and black pepper.
  7. Once all the shrimp are fried, toss them gently in the prepared hot sauce until evenly coated.
  8. Serve immediately and enjoy the heat!

Notes

  • For an extra spicy kick, increase the cayenne pepper in both the coating and the hot sauce.
  • Ensure your oil is at the correct temperature for crispy shrimp.
  • Serve with pickles or a cooling ranch dressing to balance the heat.
