Make these simple, no-bake energy bites featuring bright lemon zest and sweet dried blueberries for a quick, portable snack.

Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup pitted Medjool dates, packed
  • 1/4 cup smooth almond butter
  • 2 tablespoons dried blueberries
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Place all ingredients into a food processor.
  2. Process the mixture until it forms a sticky, uniform dough. Stop and scrape down the sides as needed.
  3. If the mixture seems too dry, add 1 teaspoon of water or lemon juice at a time until it holds together when pressed.
  4. Roll the dough into small, bite-sized balls, about 1 inch in diameter.
  5. Place the finished energy bites on a plate or baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up before serving.

Notes

  • Store leftover energy bites in an airtight container in the refrigerator for up to one week.
  • You can substitute sunflower seed butter for almond butter to make this nut-free.
  • For a stronger blueberry flavor, lightly chop the dried blueberries before adding them to the food processor.
