Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup creamy peanut butter
  • 1 cup heavy whipping cream, cold
  • 1/2 cup mini peanut butter cups, chopped (plus extra for topping)

Instructions

  1. Combine graham cracker crumbs and 1/4 cup granulated sugar in a bowl. Pour in melted butter and mix until crumbs are evenly moistened.
  2. Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Place the crust in the freezer while you prepare the filling.
  3. In a large bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, mixing until just combined.
  4. Beat in the 1/4 cup creamy peanut butter until the mixture is smooth and creamy. Scrape down the sides of the bowl.
  5. In a separate chilled bowl, whip the cold heavy whipping cream until stiff peaks form.
  6. Gently fold the whipped cream into the peanut butter cream cheese mixture until no streaks remain. Do not overmix.
  7. Fold in the chopped mini peanut butter cups.
  8. Spread the filling evenly over the chilled crust.
  9. Cover the pan loosely with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, until firm.
  10. Before serving, remove the sides of the springform pan. Top with extra chopped peanut butter cups. Slice and enjoy this comforting treat.

Notes

  • For the best results, make sure your cream cheese is truly at room temperature to avoid lumps.
  • Chill your heavy whipping cream and mixing bowl beforehand for easier whipping.
  • If you prefer a slightly lighter flavor, you can use a mix of creamy and crunchy peanut butter.
  • This cheesecake sets best when refrigerated overnight. Plan ahead for the best texture.
