Ingredients
Mascarpone cheese: 8 ounces
Heavy whipping cream: 1 cup
Powdered sugar: 1/2 cup
Vanilla extract: 1 teaspoon
Strong brewed coffee, cooled: 1 cup
Ladyfinger cookies: About 18-24 cookies
Unsweetened cocoa powder, for dusting
Instructions
In a medium bowl, whip the heavy cream until stiff peaks form. Set aside.
In a separate bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
Gently fold the whipped cream into the mascarpone mixture until just combined. Do not overmix.
Quickly dip each ladyfinger cookie into the cooled coffee, ensuring it absorbs liquid but does not become soggy.
Arrange a layer of dipped ladyfingers in the bottom of individual serving cups or glasses.
Spoon or pipe a layer of the mascarpone cream mixture over the cookies.
Repeat the layers: coffee-dipped cookies, followed by the cream mixture.
Refrigerate the cups for at least 2 hours, or until firm.
Before serving, dust the tops generously with unsweetened cocoa powder.
Notes
Use good quality coffee for the best flavor. Espresso works well.
If you prefer a slightly boozy flavor, add 1 tablespoon of rum or coffee liqueur to the cooled coffee.
You can make these cups up to one day ahead.
For a lighter cream, you can substitute some of the mascarpone with Greek yogurt, but the texture will change.
