Make this hearty, creamy lasagna soup entirely in one pot for easy cleanup. It combines classic lasagna flavors with mushrooms and spinach in a quick, comforting soup format.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 8 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup water
  • 8 ounces lasagna noodles, broken into 1-inch pieces
  • 1/2 cup heavy cream
  • 4 ounces cream cheese, cubed
  • 5 ounces fresh spinach
  • 1/2 cup ricotta cheese, for topping
  • 1/4 cup grated Parmesan cheese, for topping

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the mushrooms and cook until they release their liquid and start to brown, about 7 minutes.
  3. Stir in the garlic, Italian seasoning, salt, and pepper. Cook for 1 minute until fragrant.
  4. Pour in the vegetable broth and water. Add the diced tomatoes and the broken lasagna noodles. Bring the mixture to a boil.
  5. Reduce the heat to medium-low, cover, and simmer for 10 to 12 minutes, stirring occasionally, until the pasta is tender.
  6. Stir in the heavy cream and cubed cream cheese until the cheese melts and the soup becomes creamy.
  7. Add the fresh spinach and stir until it wilts completely, about 2 minutes.
  8. Ladle the soup into bowls. Top each serving with a dollop of ricotta cheese and a sprinkle of Parmesan cheese before serving.

Notes

  • You can substitute half-and-half for heavy cream for a slightly lighter soup.
  • For a richer tomato flavor, use fire-roasted diced tomatoes.
  • If you do not have lasagna noodles, use medium pasta shells or penne. Adjust cooking time as needed.
