This Orange Fennel Arugula Salad with Nuts offers a bright, flavorful side dish. It balances the peppery bite of arugula with sweet orange and crisp fennel, adding satisfying crunch from nuts. It is a fresh take on a classic salad.

Ingredients

Scale
  • 4 cups arugula
  • 2 small oranges, segmented
  • 1 small fennel bulb, thinly sliced
  • 1/2 cup toasted walnuts or pecans
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • Salt and black pepper to taste

Instructions

  1. Prepare the orange segments. Remove the peel and pith, then carefully cut between the membranes to release the segments.
  2. Thinly slice the fennel bulb using a sharp knife or mandoline. Place the slices in a bowl of ice water for 10 minutes to crisp them up, then drain well.
  3. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, and honey to create the dressing. Season with salt and pepper.
  4. In a large bowl, combine the arugula, orange segments, and drained fennel.
  5. Pour the dressing over the salad ingredients. Gently toss everything together to coat evenly.
  6. Sprinkle the toasted nuts over the salad just before serving.

Notes

  • Toasting the nuts deepens their flavor. Watch them closely to prevent burning.
  • You can substitute almonds or pistachios for the walnuts or pecans.
  • Make sure the fennel is very cold and crisp for the best texture contrast.
