Ingredients
Scale
2 cups rolled oats
1/2 cup peanut butter
1/4 cup honey or maple syrup
1/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup mini chocolate cups, chopped
Instructions
Preheat your oven to 300°F (150°C).
In a large bowl, combine the rolled oats, peanut butter, honey or maple syrup, vegetable oil, vanilla extract, and salt. Mix well until all the oats are evenly coated.
Spread the mixture in a single layer on a baking sheet lined with parchment paper.
Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and toasted.
Remove from the oven and let it cool completely on the baking sheet. This will help it form clusters.
Once cooled, gently stir in the chopped mini chocolate cups.
Break the granola into clusters and store in an airtight container.
Notes
For extra crunch, you can bake the granola for a few extra minutes, but watch carefully to prevent burning.
Feel free to add other mix-ins like nuts, seeds, or dried fruit after the granola has cooled.
Store in an airtight container at room temperature for up to two weeks.
