Ingredients
Scale
1 cup all-purpose flour
1/2 cup peanut butter
1/2 cup protein powder (whey or plant-based)
1/4 cup honey or maple syrup
1/4 cup milk (dairy or non-dairy)
2 large eggs
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Optional: 1/2 cup chocolate chips or chopped nuts
Instructions
Preheat your oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
In a large bowl, whisk together the flour, protein powder, baking powder, baking soda, and salt.
In a separate bowl, mix the peanut butter, honey or maple syrup, milk, and eggs until well combined.
Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
If using, fold in chocolate chips or chopped nuts.
Divide the batter evenly among the muffin cups, filling each about two-thirds full.
Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a gluten-free option, use a gluten-free all-purpose flour blend.
You can substitute peanut flour for some of the all-purpose flour for an even stronger peanut flavor.
Add a tablespoon of chia seeds or flax seeds to the batter for extra fiber and omega-3s.
These muffins freeze well. Store in an airtight container for up to 3 months.
