Ingredients
Scale
4 store-bought puff pastry sheets, thawed
1 ripe pear (such as Bosc or Anjou), thinly sliced
4 ounces Brie cheese, rind removed and cut into small pieces
1 large egg, beaten (for egg wash)
1 tablespoon milk or water (for egg wash)
1 teaspoon fresh thyme leaves (optional)
1 tablespoon butter, melted (for brushing)
Instructions
Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
Gently unfold one puff pastry sheet onto a lightly floured surface. Cut the pastry into two equal rectangles. Repeat with the remaining sheets for a total of eight rectangles.
Place a small amount of Brie pieces near one short edge of each pastry rectangle.
Arrange a few thin slices of pear over the Brie. Sprinkle lightly with fresh thyme, if using.
Brush the edges of the pastry with the egg wash. Fold the pastry over to create a triangle or roll it up like a crescent, pressing the edges firmly to seal. Crimp the edges with a fork to secure.
Place the sealed croissants onto the prepared baking sheets. Brush the tops of the croissants with the remaining egg wash for a golden finish.
Bake for 15 to 18 minutes, or until the pastry is puffed and golden brown.
Remove from the oven and immediately brush the tops lightly with melted butter for extra shine. Serve warm.
Notes
Use a firm pear so it holds its shape during baking.
If you prefer a sweeter note, sprinkle a tiny pinch of brown sugar over the pears before sealing.
