These Pear, Brie, and Prosciutto Hand Pies offer a delightful balance of sweet pear, creamy brie, and salty prosciutto wrapped in a flaky pastry. They make a perfect savory appetizer for any holiday gathering.

Ingredients

Scale
  • 1 package (14.1 ounces) refrigerated pie crusts (2 crusts)
  • 1 tablespoon all-purpose flour
  • 1 large firm-ripe pear, peeled, cored, and finely diced
  • 4 ounces Brie cheese, rind removed, cut into small cubes
  • 4 thin slices prosciutto, thinly sliced
  • 1 large egg, beaten
  • 1 teaspoon water
  • 2 tablespoons coarse sugar (optional, for sprinkling)

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Line two baking sheets with parchment paper.
  2. Lightly flour a clean surface. Unroll the pie crusts. Using a 3-inch round cutter, cut out circles from each crust. You should get about 12-14 circles per crust.
  3. In a small bowl, toss the diced pear with the flour. This helps prevent a soggy bottom.
  4. Place a small amount of pear mixture, a few cubes of Brie, and a small piece of prosciutto onto the center of one pie circle. Do not overfill.
  5. Brush the edges of the pie circle with the egg wash (beaten egg mixed with water).
  6. Top with a second pie circle. Press the edges together firmly with your fingers. Crimp the edges using a fork to seal well.
  7. Place the sealed hand pies on the prepared baking sheets. Brush the tops with the remaining egg wash.
  8. If desired, sprinkle the tops lightly with coarse sugar for extra crunch. Cut a small vent in the top of each pie to allow steam to escape.
  9. Bake for 15 to 18 minutes, or until the crusts are golden brown and puffed.
  10. Let the hand pies cool slightly on the baking sheets before serving warm.

Notes

  • Ensure the pear is firm so it holds its shape during baking.
  • You can substitute Gruyère for Brie if you prefer a sharper flavor.
  • Make sure to seal the edges tightly so the cheese does not leak out while baking.
