Make a rich, velvety peppercorn sauce at home that tastes just like your favorite steakhouse. This recipe is fast, versatile for steak or chicken, and delivers gourmet flavor without complicated steps.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 small shallot, finely minced
  • 1 tablespoon cracked black peppercorns (or green peppercorns for a milder flavor)
  • 1 teaspoon minced garlic
  • 1/4 cup brandy or cognac (optional, substitute with beef broth for alcohol-free)
  • 1 cup beef stock (low sodium preferred)
  • 1/2 cup heavy cream
  • 1/2 teaspoon Worcestershire sauce (optional, for depth)
  • Salt to taste

Instructions

  1. Melt the butter in a small saucepan over medium heat. Add the minced shallot and cook until softened, about 2 minutes.
  2. Add the cracked peppercorns and minced garlic. Cook for 1 minute until fragrant, stirring constantly.
  3. If using alcohol, carefully pour in the brandy or cognac. Let it bubble and reduce by half, scraping up any browned bits from the bottom of the pan. This takes about 1-2 minutes. (If omitting alcohol, proceed to the next step.)
  4. Pour in the beef stock and Worcestershire sauce (if using). Bring the mixture to a simmer and let it reduce slightly for about 3-5 minutes until the liquid has thickened a bit.
  5. Reduce the heat to low. Stir in the heavy cream. Heat gently until the sauce is hot but do not allow it to boil once the cream is added.
  6. Taste the sauce and add salt if needed. If you prefer a thicker steakhouse sauce, you can whisk in 1/2 teaspoon of cornstarch mixed with 1 tablespoon of cold water and simmer for 1 minute until thickened.
  7. Serve your rich, velvety meat sauce immediately over your favorite steak, chicken, or roasted vegetables.

Notes

  • For a truly restaurant quality steak sauce, use freshly cracked peppercorns; pre-ground pepper will not give you the right texture.
  • If you want a green peppercorn sauce recipe, substitute black peppercorns with drained green peppercorns packed in brine.
  • This simple savory pan sauce works wonderfully as a gourmet sauce for chicken when you need elevated weeknight dinner ideas.
