Ingredients

Scale
  • 1 pound ground pork
  • 1/2 cup panko breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup soy sauce
  • 1/4 cup mirin (Japanese sweet rice wine)
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated fresh ginger
  • 1/2 teaspoon sesame oil
  • 1 (8 ounce) can pineapple chunks, drained
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Sesame seeds, for garnish (optional)
  • Chopped green onions, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground pork, panko breadcrumbs, milk, egg, chopped onion, minced garlic, salt, and pepper. Mix gently until just combined. Do not overmix.
  3. Roll the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  4. Bake for 15-20 minutes, or until the meatballs are browned and cooked through.
  5. While the meatballs are baking, prepare the teriyaki sauce. In a medium saucepan, whisk together the soy sauce, mirin, brown sugar, rice vinegar, grated ginger, and sesame oil.
  6. Bring the sauce to a simmer over medium heat, stirring until the brown sugar is dissolved.
  7. In a small bowl, whisk together the cornstarch and water to create a slurry.
  8. Gradually whisk the cornstarch slurry into the simmering teriyaki sauce. Cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
  9. Add the drained pineapple chunks to the thickened teriyaki sauce and stir to combine.
  10. Once the meatballs are cooked, add them to the saucepan with the teriyaki sauce and pineapple. Gently stir to coat the meatballs evenly.
  11. Simmer for another 5 minutes, allowing the flavors to meld and the meatballs to heat through.
  12. Serve the Pineapple Teriyaki Meatballs warm, garnished with sesame seeds and chopped green onions if desired.

Notes

  • For a deeper flavor, you can use a mix of ground pork and ground beef.
  • If you don’t have mirin, you can substitute with dry sherry or white wine with a pinch of sugar.
  • Adjust the brown sugar to your preferred sweetness level.
  • These meatballs are delicious served on their own or with toothpicks for easy party serving.
