Ingredients
Scale
1 (about 1.5 lb) pork tenderloin
1/2 cup pineapple juice
1/4 cup low-sodium soy sauce
2 tablespoons brown sugar
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
1 clove garlic, minced
1/4 teaspoon ground black pepper
1 tablespoon cornstarch
1 tablespoon cold water
Fresh pineapple slices for garnish (optional)
Chopped green onions for garnish (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, whisk together the pineapple juice, soy sauce, brown sugar, rice vinegar, ginger, garlic, and black pepper. This is your teriyaki sauce.
Place the pork tenderloin in a roasting pan. Pour half of the teriyaki sauce over the pork, turning to coat evenly. Reserve the remaining sauce.
Roast the pork for 20 to 25 minutes, or until a meat thermometer inserted into the thickest part reads 145°F (63°C).
While the pork roasts, prepare the glaze thickener. In a small bowl, whisk the cornstarch and cold water until smooth.
Once the pork reaches temperature, remove it from the oven and transfer it to a cutting board. Tent loosely with foil and let it rest for 5 to 10 minutes.
While the pork rests, pour the reserved teriyaki sauce into a small saucepan. Bring to a simmer over medium heat.
Whisk the cornstarch slurry into the simmering sauce. Cook, stirring constantly, until the sauce thickens into a glaze, about 1 minute.
Slice the rested pork tenderloin. Drizzle generously with the warm pineapple teriyaki glaze.
Garnish with fresh pineapple slices and green onions, if desired. Serve immediately.
Notes
For best results, allow the pork to rest before slicing; this keeps the juices inside.
You can use canned pineapple juice if fresh is not available.
This dish pairs well with steamed rice or roasted seasonal vegetables.
