Create light and fluffy pancakes topped with caramelized pineapple rings for a bright, tropical breakfast treat. This recipe balances comforting tradition with fresh, sunny flavors.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter, plus more for the pan
  • 1 teaspoon vanilla extract
  • 1 (8 ounce) can pineapple slices in juice, drained (reserve juice)
  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • Fresh pineapple chunks for topping (optional)

Instructions

  1. Whisk together the flour, granulated sugar, baking powder, and salt in a large bowl.
  2. In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are fine.
  4. Prepare the pineapple topping: In a small skillet over medium heat, melt 1 tablespoon of butter. Add the brown sugar and stir until dissolved.
  5. Arrange the pineapple slices in the skillet in a single layer. Cook for 2-3 minutes per side until lightly caramelized. Remove pineapple and set aside.
  6. Wipe the skillet clean and return it to medium heat. Lightly grease with butter.
  7. Pour about 1/4 cup of batter onto the hot skillet for each pancake.
  8. Immediately place one caramelized pineapple slice on top of each cooking pancake.
  9. Cook until bubbles appear on the surface and the edges look set, about 2-3 minutes.
  10. Flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.
  11. Serve the pancakes immediately, topping with the warm pineapple slices and fresh pineapple chunks if using.

Notes

  • If your batter seems too thick, add a splash of the reserved pineapple juice for extra flavor.
  • For extra fluffy pancakes, let the batter rest for 5 minutes before cooking.
  • You can substitute fresh pineapple rounds for canned slices.
