Make this easy slow cooker pork roast and sauerkraut for a comforting, traditional meal. The pork becomes incredibly tender while cooking with tangy sauerkraut and sweet apples, bringing good luck for the New Year.

Ingredients

Scale
  • 3 lb pork shoulder roast
  • 1 (32 ounce) bag sauerkraut, drained
  • 2 large apples, cored and sliced
  • 1 large onion, sliced
  • 1/2 cup chicken broth
  • 1 tablespoon brown sugar
  • 1 teaspoon caraway seeds
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Instructions

  1. Place the sliced onions in the bottom of your slow cooker to create a base.
  2. Place the pork roast on top of the onions.
  3. In a bowl, mix the drained sauerkraut, sliced apples, chicken broth, brown sugar, caraway seeds, salt, and pepper.
  4. Spread the sauerkraut and apple mixture evenly over the pork roast.
  5. Cover the slow cooker and cook on low for 7 to 8 hours, or on high for 3 to 4 hours, until the pork is fork-tender.
  6. Remove the pork roast and shred it using two forks. Return the shredded pork to the slow cooker and stir it into the sauerkraut mixture.
  7. Serve hot. This is a great New Year food tradition for good luck.

Notes

  • For an extra layer of flavor, you can sear the pork roast on all sides in a hot skillet before placing it in the slow cooker.
  • If you prefer a thicker sauce, remove the pork near the end of cooking and let the remaining liquid simmer on high for 15-20 minutes, or mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the hot liquid until thickened.
  • This recipe pairs well with mashed potatoes or rye bread to soak up the juices.
