Ingredients
Scale
1 cup (2 sticks) unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 (15 ounce) can pumpkin puree
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 cup semisweet chocolate chips
8 ounces cream cheese, softened
1/4 cup powdered sugar (for cheesecake swirl)
For Frosting: 1 cup powdered sugar, 2 tablespoons butter melted, 1 teaspoon milk, dash of vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper, leaving an overhang.
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and pumpkin puree until just combined.
In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and ginger.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Fold in the chocolate chips.
In another bowl, beat the softened cream cheese with the 1/4 cup powdered sugar until smooth.
Pour two-thirds of the brownie batter into the prepared pan. Dollop spoonfuls of the cream cheese mixture over the batter. Pour the remaining brownie batter over the cream cheese.
Use a knife or skewer to gently swirl the cream cheese mixture into the brownie batter.
Bake for 30 to 35 minutes, or until a toothpick inserted near the center comes out with moist crumbs attached. Do not overbake.
Let the brownies cool completely in the pan on a wire rack.
Prepare the frosting: Whisk together the powdered sugar, melted butter, milk, and vanilla until smooth.
Once cooled, spread the frosting evenly over the brownies. Cut into squares and serve.
Notes
For an extra deep flavor, use dark brown sugar in place of some granulated sugar in the brownie batter.
If you want a stronger pumpkin spice flavor, add an extra 1/4 teaspoon of cinnamon to the dry ingredients.
Cooling the brownies completely before frosting makes for cleaner cuts.
