Ingredients

Scale
  • 1 cup warm milk (105-115°F)
  • 2 ¼ teaspoons active dry yeast
  • ¼ cup granulated sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • ¼ cup unsalted butter, melted
  • 1 teaspoon salt
  • 4 cups all-purpose flour, plus more for dusting
  • For Cinnamon Butter:
  • ½ cup unsalted butter, softened
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. In a large bowl, combine warm milk, yeast, and sugar. Let stand for 5-10 minutes until foamy.
  2. Stir in pumpkin puree, egg, melted butter, and salt.
  3. Gradually add flour, mixing until a soft dough forms.
  4. Turn dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.
  5. Place dough in a greased bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Punch down dough and divide into 12 equal pieces. Shape each piece into a ball and place in a greased 9×13 inch baking pan.
  7. Cover and let rise for another 30-45 minutes.
  8. Preheat oven to 375°F (190°C).
  9. Bake rolls for 15-20 minutes, or until golden brown.
  10. While rolls are baking, prepare cinnamon butter: In a small bowl, mix softened butter, brown sugar, and cinnamon until well combined.
  11. Serve warm rolls with cinnamon butter.

Notes

  • Ensure your milk is warm but not hot, to activate the yeast properly.
  • Kneading develops the gluten, giving the rolls a good texture.
  • A warm place for rising can be an oven with just the light on.
  • For a richer flavor, you can add a pinch of nutmeg or ginger to the dough.
