Enjoy this warm, comforting Pumpkin Spice Overnight Chia Pudding for a healthy seasonal breakfast. It blends deep, familiar flavors with a fresh, light preparation method, perfect for starting your day.

Ingredients

Scale
  • 1/4 cup chia seeds
  • 1 cup milk (dairy or non-dairy)
  • 2 tablespoons pumpkin puree
  • 1 tablespoon maple syrup (or to taste)
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • Optional Toppings: chopped pecans, extra pumpkin spice, yogurt

Instructions

  1. In a jar or container, combine the chia seeds, milk, pumpkin puree, maple syrup, pumpkin pie spice, vanilla extract, and salt.
  2. Stir well to break up any clumps of pumpkin puree and ensure the chia seeds are evenly distributed.
  3. Seal the container and shake vigorously for about 30 seconds.
  4. Open the container and stir again after 5 minutes. This prevents the seeds from settling at the bottom.
  5. Cover and refrigerate for at least 4 hours, or preferably overnight, until the mixture thickens to a pudding consistency.
  6. In the morning, stir the pudding. If it is too thick, add a splash more milk until you reach your desired texture.
  7. Serve chilled, topped with your favorite additions.

Notes

  • This recipe captures the balance between Spoon’s comforting roots (pumpkin spice) and Sprout’s fresh approach (overnight preparation).
  • Adjust the maple syrup based on how sweet you like your pudding.
  • For a richer flavor, use full-fat coconut milk.
  • Prepare this recipe the night before for a quick grab-and-go morning meal.
