Assemble these simple chicken Caesar wraps fast for a satisfying midday meal using pre-cooked chicken.

Ingredients

Scale
  • 2 cups cooked, shredded chicken (rotisserie recommended)
  • 4 large flour tortillas or wraps
  • 1/2 cup Caesar dressing
  • 1 cup chopped romaine lettuce
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon lemon juice
  • 1/4 teaspoon black pepper

Instructions

  1. In a medium bowl, combine the shredded chicken, Caesar dressing, lemon juice, and black pepper. Mix until the chicken is evenly coated.
  2. Warm the tortillas briefly in a microwave or dry skillet if desired, to make them more pliable.
  3. Lay one tortilla flat. Place one-fourth of the chicken mixture down the center.
  4. Top the chicken with one-fourth of the chopped romaine lettuce and a sprinkle of Parmesan cheese.
  5. Fold the sides of the tortilla inward over the filling. Then, tightly roll the bottom edge up over the filling and continue rolling until you have a secure wrap.
  6. Repeat with the remaining ingredients for the other three wraps.
  7. Slice the wraps in half diagonally before serving or packing.

Notes

  • For make-ahead lunches, mix the chicken and dressing but keep the lettuce separate until just before serving to prevent sogginess.
  • Use low-fat Caesar dressing to reduce fat content.
  • If you do not have rotisserie chicken, cook chicken breasts ahead of time and shred them.
