Ingredients
Scale
1/2 cup cooked quinoa
1 ripe banana, mashed
2 large eggs, separated
1 tablespoon maple syrup (or sweetener of choice)
1/2 teaspoon vanilla extract
1/4 teaspoon baking powder
Pinch of salt
Butter or oil for cooking
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a non-stick skillet or oven-safe pan.
In a bowl, combine the cooked quinoa, mashed banana, egg yolks, maple syrup, and vanilla extract. Mix well.
Stir in the baking powder and salt.
In a separate, clean bowl, whip the egg whites until stiff peaks form. This creates the souffle texture.
Gently fold one-third of the whipped egg whites into the quinoa mixture to lighten it.
Carefully fold in the remaining egg whites until just combined. Do not overmix.
Pour the batter into your prepared skillet.
Cook on the stovetop over medium-low heat for 3-4 minutes until the bottom is set.
Transfer the skillet to the preheated oven. Bake for 10-12 minutes, or until the souffle is puffed and cooked through.
Serve immediately.
Notes
Ensure your egg whites are whipped to stiff peaks for maximum fluffiness.
Use thoroughly cooked quinoa for the best texture.
