Create a bright, flavorful Rainbow Veggie Sushi Bowl using wholesome brown rice. This recipe balances comforting tradition with fresh, seasonal produce for a healthy and satisfying meal.

Ingredients

Scale
  • 1 cup brown rice
  • 2 cups water
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 large carrot, julienned
  • 1 avocado, sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup red cabbage, shredded
  • 1/2 cup edamame, shelled
  • 4 sheets nori, cut into thin strips
  • 2 tablespoons soy sauce or tamari (for dressing)
  • 1 teaspoon sesame oil (for dressing)
  • Optional: Sesame seeds for garnish

Instructions

  1. Cook the brown rice according to package directions using the 2 cups of water.
  2. While the rice cooks, prepare the sushi seasoning: Whisk together the rice vinegar, sugar, and salt until dissolved.
  3. Once the rice is cooked, transfer it to a large bowl. Gently fold in the sushi seasoning until the rice is evenly coated. Let it cool slightly.
  4. Prepare all your vegetables: julienne the carrot, slice the avocado and bell pepper, and shred the cabbage.
  5. To assemble the bowls, divide the seasoned brown rice among serving bowls.
  6. Arrange the prepared vegetables (carrot, avocado, red pepper, cabbage, edamame) neatly over the rice in separate sections to create a rainbow effect.
  7. Sprinkle the nori strips over the top.
  8. Whisk together the soy sauce/tamari and sesame oil to create a simple dressing. Drizzle over the ingredients just before serving.
  9. Garnish with sesame seeds if desired. Enjoy your fresh bowl!
