Make a refreshing Raspberry Lime Rickey. This recipe provides instructions for both a non-alcoholic sparkling mocktail and an alcoholic cocktail version using your choice of spirit.

Ingredients

Scale
  • 6 fresh raspberries
  • 1 ounce fresh lime juice
  • 1 ounce simple syrup (or to taste)
  • 2 ounces spirit (optional, for cocktail version: gin or vodka recommended)
  • 4 ounces club soda or sparkling water
  • Lime wheel, for garnish
  • Extra raspberries, for garnish

Instructions

  1. Place the 6 fresh raspberries into a sturdy shaker.
  2. Gently muddle the raspberries to release their juice and flavor.
  3. Add the lime juice and simple syrup to the shaker.
  4. If making the cocktail version, add 2 ounces of your chosen spirit now.
  5. Fill the shaker with ice.
  6. Shake well until the shaker is thoroughly chilled.
  7. Strain the mixture into an ice-filled highball glass.
  8. Top the drink with 4 ounces of club soda or sparkling water.
  9. Gently stir once to combine the soda.
  10. Garnish with a lime wheel and a few extra raspberries.

Notes

  • Adjust the simple syrup amount based on the tartness of your limes and your sweetness preference.
  • For a mocktail, simply omit the spirit and increase the club soda slightly if desired.
  • To make a batch for a party, mix the muddled raspberries, lime juice, syrup, and spirit (if using) ahead of time. Add ice and top with club soda just before serving each drink.
