Ingredients
Scale
6 cups cubed seedless watermelon
8 ounces feta cheese, cubed or crumbled
1/2 cup fresh mint leaves, roughly chopped
1/4 cup red onion, thinly sliced (optional)
2 tablespoons fresh lime juice
1 tablespoon olive oil
1 teaspoon honey or maple syrup
Pinch of black pepper
Instructions
Place the cubed watermelon in a large bowl.
Add the feta cheese and chopped fresh mint to the bowl with the watermelon. If using, add the thinly sliced red onion.
In a small bowl, whisk together the lime juice, olive oil, and honey or maple syrup until combined.
Pour the dressing over the watermelon mixture.
Gently toss the salad to coat all ingredients evenly.
Sprinkle with black pepper just before serving.
Notes
For added crunch, include 1/4 cup of toasted pecans or slivered almonds.
If you prefer a tangier dressing, substitute the lime juice with lemon juice.
For a richer finish, drizzle a small amount of balsamic glaze over the assembled salad instead of the lime dressing.
You can cube the feta yourself or buy pre-crumbled feta for faster preparation.
