Ingredients
Scale
1 large head cauliflower, cut into florets
1 whole head garlic
2 tablespoons olive oil
4 tablespoons butter, softened
1/4 cup milk or cream (adjust for desired consistency)
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)
Instructions
Preheat your oven to 400°F (200°C).
Slice the top off the head of garlic to expose the cloves. Drizzle with 1 tablespoon of olive oil.
Wrap the garlic head tightly in aluminum foil. Roast for 30 to 40 minutes, until the cloves are soft and golden. Let it cool slightly.
While the garlic roasts, toss the cauliflower florets with the remaining 1 tablespoon of olive oil, salt, and pepper on a baking sheet.
Roast the cauliflower for 20 to 25 minutes, until tender and slightly browned.
Squeeze the softened roasted garlic from its skin into a food processor or large bowl.
Add the roasted cauliflower, butter, and milk or cream to the garlic.
Process or mash until smooth and creamy. Add more liquid if needed for your preferred texture.
Taste and adjust salt and pepper before serving warm.
Notes
For an extra layer of flavor, use brown butter instead of regular butter.
You can substitute the milk or cream with vegetable broth for a dairy-free option.
If you prefer a tangier mash, stir in a teaspoon of Dijon mustard at the end.
