A simple recipe for oven-roasted sweet potatoes that achieve a crispy exterior and tender interior, featuring two popular flavor options: savory Garlic Parmesan and sweet Honey Maple.

Ingredients

Scale
  • 3 large sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil, divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 cup grated Parmesan cheese (for Garlic Parmesan variation)
  • 2 tablespoons honey or maple syrup (for Honey Maple variation)
  • 1/2 teaspoon cinnamon (optional, for Honey Maple variation)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line two large baking sheets with parchment paper to prevent sticking and promote crisping.
  2. In a large bowl, toss the sweet potato cubes with 2 tablespoons of olive oil, salt, pepper, and garlic powder until evenly coated.
  3. Spread the sweet potatoes in a single layer on the prepared baking sheets. Do not overcrowd the pans; use two sheets if necessary for maximum crispiness.
  4. Roast for 15 minutes.
  5. Remove the pans from the oven. For the Garlic Parmesan version, toss half the potatoes with the grated Parmesan cheese. For the Honey Maple version, drizzle the remaining potatoes with honey or maple syrup and sprinkle with cinnamon, if using.
  6. Return both pans to the oven and roast for another 10 to 15 minutes, or until the potatoes are tender inside and caramelized and crispy on the edges.
  7. Remove from the oven, toss with the remaining 1 tablespoon of olive oil if needed, and garnish with fresh parsley before serving.

Notes

  • For the crispiest results, ensure your oven is fully preheated and do not let the potatoes touch each other on the baking sheet.
  • If you prefer a fully vegan option, omit the Parmesan cheese and use maple syrup for the sweet glaze.
  • Cut the potatoes into uniform sizes so they cook evenly.
