Enjoy these wonderfully flavorful Sage Butter Sweet Potatoes with Pecans. This side dish balances deep, comforting flavors with a fresh lift, perfect for complementing any meal.

Ingredients

Scale
  • 3 large sweet potatoes, peeled and diced
  • 4 tablespoons unsalted butter
  • 2 tablespoons fresh sage, chopped
  • 1/4 cup pecans, roughly chopped
  • 1 tablespoon maple syrup (optional, for extra sweetness)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with a drizzle of oil, salt, and pepper on a baking sheet.
  3. Roast the sweet potatoes for 20 minutes, or until they begin to soften.
  4. While the potatoes roast, melt the butter in a small skillet over medium heat.
  5. Add the chopped sage to the melted butter. Cook gently until the sage is fragrant and slightly crisp, about 2-3 minutes. Do not let the butter brown too much.
  6. Remove the sweet potatoes from the oven.
  7. Pour the sage butter mixture over the potatoes. Toss well to coat.
  8. Sprinkle the chopped pecans and maple syrup (if using) over the potatoes.
  9. Return the baking sheet to the oven and roast for another 10-15 minutes, until the potatoes are tender and slightly caramelized.
  10. Taste and adjust salt and pepper before serving warm.

Notes

  • You can substitute brown sugar for maple syrup if you prefer.
  • For extra crunch, toast the pecans separately before adding them to the potatoes.
  • This dish pairs well with roasted chicken or pork tenderloin.
