Ingredients
Scale
1 pound salmon fillets
4 cups broccoli florets
2 tablespoons olive oil
1 lemon, thinly sliced
2 cloves garlic, minced
1 teaspoon dried dill
Salt, to taste
Black pepper, to taste
Instructions
Preheat your oven to 400 degrees F (200 degrees C).
Tear off four large sheets of heavy-duty aluminum foil.
Divide the broccoli florets evenly between the four foil sheets, placing them in the center of each.
Place one salmon fillet on top of the broccoli in each packet.
Drizzle each salmon and broccoli portion with olive oil.
Sprinkle the minced garlic, dried dill, salt, and pepper over the salmon and broccoli.
Top each fillet with a few thin lemon slices.
Fold the foil over the ingredients to create a tightly sealed packet. Crimp the edges well to prevent steam from escaping.
Place the foil packets on a baking sheet.
Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Carefully open the packets (watch out for hot steam) and serve immediately.
Notes
For extra zest, add a splash of white wine or soy sauce inside the packet before sealing.
You can substitute asparagus or green beans for the broccoli.
Make sure your foil packets are sealed completely to steam the fish perfectly.
