Ingredients

Scale
  • 1 pound ground beef or a mix of beef and pork
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg, lightly beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup prepared BBQ sauce
  • 1/4 cup salted caramel sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 6 sub rolls or hoagie buns
  • 1 cup shredded mozzarella or provolone cheese
  • For garnish: chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. In a large bowl, gently combine the ground meat, breadcrumbs, milk, egg, salt, and pepper. Do not overmix.
  3. Roll the meat mixture into small, uniform meatballs, about 1 inch in diameter.
  4. Place the meatballs on a baking sheet lined with parchment paper.
  5. Bake for 15-18 minutes, or until cooked through.
  6. While the meatballs bake, prepare the sauce. In a small saucepan over medium heat, whisk together the BBQ sauce, salted caramel sauce, apple cider vinegar, smoked paprika, and garlic powder. Heat until warm and slightly bubbling.
  7. Remove the meatballs from the oven and gently toss them in the salted caramel BBQ sauce until fully coated.
  8. Slice the sub rolls lengthwise, keeping one side attached. Fill each roll generously with the sauced meatballs.
  9. Top the meatballs in each sub roll with shredded cheese.
  10. Return the open-faced subs to the oven or place them under the broiler for 2-3 minutes, until the cheese is melted and bubbly.
  11. Serve immediately. Garnish with fresh parsley if desired.

Notes

  • You can make the meatballs ahead of time and store them in the refrigerator for up to two days.
  • Adjust the amount of salted caramel sauce to match your preference for sweetness.
  • If you prefer, you can cook the meatballs in a slow cooker with the sauce for 3-4 hours on low for an even deeper flavor infusion.
