Ingredients

Scale
  • 12 ounces good quality white chocolate, divided
  • 8 ounces semi-sweet chocolate, divided
  • 1 cup crushed peppermint candies or candy canes
  • 1/2 cup salted caramel sauce
  • 1 tablespoon coconut oil (optional, for smoother melting)

Instructions

  1. Line a baking sheet with parchment paper.
  2. Melt 8 ounces of white chocolate with the coconut oil (if using) in a double boiler or microwave in 30-second intervals, stirring until smooth.
  3. Spread the melted white chocolate evenly onto the prepared baking sheet.
  4. Drizzle half of the salted caramel sauce over the white chocolate layer.
  5. Sprinkle half of the crushed peppermint candies over the caramel.
  6. Place the baking sheet in the refrigerator to set for about 15 minutes, until firm.
  7. Melt the 8 ounces of semi-sweet chocolate in a separate double boiler or microwave until smooth.
  8. Spread the melted semi-sweet chocolate over the set white chocolate layer.
  9. Drizzle the remaining salted caramel sauce over the semi-sweet layer.
  10. Sprinkle the remaining crushed peppermint candies on top.
  11. Melt the remaining 4 ounces of white chocolate. Drizzle this over the top layer to create a decorative finish.
  12. Return the bark to the refrigerator until completely firm, about 30-45 minutes.
  13. Break the bark into irregular pieces. Store in an airtight container.

Notes

  • Use high-quality chocolate for the best flavor and melt.
  • If you prefer a stronger mint flavor, add 1/4 teaspoon of peppermint extract to the melted semi-sweet chocolate.
  • You can adjust the amount of caramel and peppermint to match your preference for richness.
