Ingredients
Scale
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup (1 stick) cold unsalted butter, cut into cubes
1 cup shredded sharp cheddar cheese
2 tablespoons chopped fresh chives
3/4 cup cold milk or buttermilk
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, baking powder, salt, and pepper.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Stir in the shredded cheddar cheese and chopped chives.
Make a well in the center and pour in the cold milk. Stir until just combined. Do not overmix.
Turn the dough out onto a lightly floured surface and gently pat it into a 3/4-inch thick round.
Cut the dough into 8 wedges.
Place the wedges on the prepared baking sheet.
Bake for 15-20 minutes, or until golden brown and cooked through.
Notes
For extra flavor, you can add a pinch of garlic powder to the dry ingredients.
If you don’t have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or white vinegar to 3/4 cup of milk and letting it sit for 5 minutes.
