Ingredients
Scale
1/2 cup rolled oats
1 cup water or broth (vegetable or chicken)
Pinch of salt
1/2 small avocado, sliced or diced
1 large egg
1 teaspoon soy sauce or tamari (optional)
Pinch of black pepper
Optional toppings: sesame seeds, chili flakes, chopped scallions
Instructions
Combine the rolled oats, water or broth, and salt in a small saucepan.
Bring the mixture to a boil over medium-high heat, then reduce heat to low.
Simmer, stirring occasionally, until the oats are cooked and the liquid is absorbed, about 5 to 7 minutes.
While the oatmeal cooks, cook the egg to your preference (fried, poached, or soft-boiled work well). You want a runny yolk for the best result.
Pour the cooked oatmeal into a bowl.
Arrange the avocado slices on top of the oatmeal.
Place the cooked egg in the center of the bowl.
Drizzle with soy sauce or tamari, if using.
Season with black pepper and add any desired toppings like sesame seeds or chili flakes.
Serve immediately and enjoy the savory flavors.
Notes
Using broth instead of water adds significant savory depth to the oats.
A soft-boiled or fried egg with a runny yolk mixes into the oatmeal to create a rich sauce.
Feel free to substitute the egg with crumbled feta or goat cheese for a vegetarian option.
Add a dash of vinegar to the water when poaching the egg for a firmer white.
