Ingredients

Scale
  • 1.5 lbs salmon fillet
  • 1 lb broccoli florets
  • 1 red bell pepper, chopped
  • 1 red onion, cut into wedges
  • 1/4 cup olive oil
  • 1/4 cup Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together Dijon mustard, honey, soy sauce, garlic powder, salt, and pepper for the glaze.
  3. In a large bowl, toss broccoli florets, red bell pepper, and red onion with olive oil, salt, and pepper.
  4. Spread the vegetables in a single layer on a large baking sheet.
  5. Roast the vegetables for 10 minutes.
  6. Remove the baking sheet from the oven. Place the salmon fillet on the baking sheet among the vegetables.
  7. Brush the salmon generously with the honey mustard glaze.
  8. Return the baking sheet to the oven and roast for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
  9. Serve immediately.

Notes

  • You can substitute other vegetables like asparagus, Brussels sprouts, or sweet potatoes.
  • Ensure the salmon is cooked to your desired doneness.
  • For extra flavor, you can add a sprinkle of fresh parsley before serving.
