Make a complete, flavorful dinner on one pan with this simple recipe for roasted chicken pieces and mixed vegetables seasoned with fresh lemon and herbs.

Ingredients

Scale
  • 2 lbs chicken pieces (thighs, breasts, or drumsticks)
  • 1 lb small potatoes, quartered
  • 1 large head of broccoli, cut into florets
  • 2 carrots, peeled and sliced
  • 1 red onion, cut into wedges
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, thinly sliced for topping

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large, rimmed baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper to make the marinade.
  3. Place the chicken pieces in the bowl and toss to coat them thoroughly with the marinade. Set aside.
  4. Add the potatoes, broccoli, carrots, and red onion to the same bowl. Toss the vegetables until they are lightly coated with any remaining marinade.
  5. Arrange the chicken pieces on one side of the prepared baking sheet. Distribute the vegetables evenly on the other side of the pan, ensuring nothing is overly crowded.
  6. Place the thin lemon slices over the chicken pieces.
  7. Roast for 35 to 45 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius) and the vegetables are tender and slightly browned.
  8. Remove from the oven and serve immediately.

Notes

  • For crispier potatoes, you can parboil them for 5 minutes before tossing them with the oil and herbs.
  • If using only chicken breasts, reduce the roasting time slightly to prevent drying.
  • You can substitute Brussels sprouts or bell peppers for any of the listed vegetables.
