Make this easy sheet pan dinner using chicken thighs, pineapple, and a savory teriyaki glaze for a quick weeknight meal with minimal cleanup.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 head of broccoli, cut into florets
  • 1/2 cup store-bought teriyaki sauce (or homemade)
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
  2. In a medium bowl, whisk together the teriyaki sauce, soy sauce, brown sugar, ginger, garlic, and vegetable oil to create the glaze.
  3. Place the chicken thighs, pineapple chunks, bell pepper pieces, and broccoli florets onto the prepared baking sheet.
  4. Pour half of the teriyaki glaze over the chicken and vegetables. Toss everything gently on the pan until coated.
  5. Arrange the chicken thighs in a single layer on the sheet pan. Season the chicken lightly with salt and pepper.
  6. Bake for 15 minutes.
  7. Remove the pan from the oven. Brush the remaining teriyaki glaze over the chicken thighs.
  8. Return the pan to the oven and bake for another 5 to 10 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender-crisp.
  9. Serve immediately, perhaps over cooked rice.

Notes

  • If you prefer thicker sauce, reserve 2 tablespoons of the glaze and brush it on during the last 5 minutes of cooking.
  • For extra flavor, you can marinate the chicken in half the glaze for 30 minutes before baking.
  • If using canned pineapple, make sure to drain it well before adding it to the pan.
